Pizza-Stuffed Baguette; The Big Game continued!


This is one of my favorite appetizers for any occasion because it’s so versatile.  You can basically stuff it with anything but the kitchen sink!  It’s also fun to let the kiddos in on the action because your basically making a pizza and who doesn’t love pizza?

It’s a great dish to take with you when someone asks you to bring something to their party because it transfers very easily in the original foil and reheats in a snap.  This easy and creative spin on pizza is sure to be a crowd pleaser at your party for the Big Game!

Pizza Stuffed Baguette

1/4 cup olive oil divided
2 french baguettes
1/4 teaspoon chili powder
2 cups sliced pepperoni
1 cup crumbled sweet sausage, cooked
3 cups spinach
1- 12 ounce jar roasted red peppers
1/2 cup fresh or canned mushrooms (drained)
2 cups mozarella cheese
1 cup shaved parmesan
2-3 cups of your favorite pizza sauce for dipping.

Optional: any additional ingredients you enjoy on your pizza!

Hallow out two french baguettes by cutting off ends and pulling out soft dough.  Set ends of bread aside. You may need to use a long spoon. (skinny wooden spoons work best)! Be careful not to puncture outer layer.

In a pan over medium heat add olive oil. Add chili powder, pepperoni, sausage, spinach, peppers and mushrooms to pan.  Cook on medium heat until spinach is wilted and ingredients are heated through; about 5-8 minutes. Transfer to bowl and mix in cheeses.  Divide mixture in half and stuff each baguette with a spoon.  Place inverted ends back on baguette to create a seal and wrap in aluminum foil.  Bake in a 350 degree preheated oven for 25 minutes. Remove and increase oven temperature to 400 degrees.  Open foil and brush baguette with remaining olive oil.  Return to oven and cook an additional 5-8 minutes. Remove and let set for about 5 minutes.  With serrated knife cut in about 1- inch slices.  If taking with you to a party return to “baguette’ form and roll in original foil until ready to serve. Otherwise, arrange slices on a platter and serve with your favorite pizza sauce for dipping.  Serves 6-8.

Fit & Fabulous Tip:  Substitute the baguette with a multi-grain tortilla. Follow instructions above but substitute with your favorite fresh, healthy ingredients (adjust quantities to fit in the tortilla) and roll.  I suggest artichoke hearts, fresh spinach, roasted peppers, cooked chicken or shrimp and part-skim mozzarella cheese. Cover with aluminum foil and bake at 350 degrees for about 10-15 minutes.  May also open foil and lightly drizzle with 1 tsp olive oil for an additional 5 minutes or until crispy in a 400 degree oven prior to serving.
