Homemade Chili; The Big Game continued!

Not only is this one of the BEST comfort foods for this time of year but a nice, hot bowl of chili is perfect for any Super bowl party! You can always add a “fix-ins’ bar complete with assorted shredded cheeses, onions, hot sauces, chives, scallions, assorted hot peppers and sour cream for a fabulous presentation for your guests.

This is also the perfect recipe to cook on the stove quickly then transfer to a crockpot to hold all day.  It’s also a great dish to bring to a party.  Not sold yet? Well you can freeze the leftovers for dinner next week too! I can’t think of anything else that’s more perfect to round out this “Big Game” edition of my blog.

Homemade Chili

1 pound ground beef
1 cup ketchup
1 can diced roasted tomatoes
1 bell pepper chopped
1/2 onion chopped
1 can northern white beans
1 tbsp olive oil
2 tbsp chili powder (or to taste)
1 tsp cayenne pepper (or to taste)
1/2 cup shredded cheddar or taco cheese blend
salt & pepper to taste

Coat bottom of pan with olive oil. Add chopped onion and bell pepper, simmer until softened. Add ground beef and brown. Add all remaining ingredients, stir until blended and simmer on stovetop for about 20-30 minutes to blend flavor. (May also be transferred to slow-cooker on low for 6-8 hours). Serve in bowls and garnish with shredded cheddar cheese.

Serves 4-6.

Fit & Fabulous Tip: Substitute the ground beef with ground chicken or turkey. Omit the ketchup.
