Cheesy Beef Quesadillas; The Big Game continued!

The chili butter really takes these cheesy quesadillas next level.  It’s also a quick, easy option for what else but Super bowl Sunday!

The kiddos will love it because it’s fun to dip! My Kaden likes to combine sour cream and salsa for dipping so that’s an option instead of just one or the other.

This recipe is a great addition to any party as an appetizer or meal. The best part of this recipe (other than the incredible flavor from the delicious taco seasonings) is that they are baked, so you can make them all at once and fast. You don’t have to stand over a stove and make them in batches. They’re the perfect go-to for any fun event both big and small!

Cheesy Quesadillas 

1 lb ground beef
10 small flour tortillas
1 cup chopped onion
2 tbsp butter
1 Tbsp Chili Powder.
1/2 tsp Garlic Powder.
1/2 tsp Onion Powder.
1/4 tsp Crushed Red Pepper Flakes.
1/4 tsp Dried Oregano.
1/2 tsp Paprika.
1 1/2 tsp Ground Cumin.
1 tsp Salt
2 cups shredded cheddar
1 cup black beans, drained
1 cup sour cream
2 tbsp fresh chives
salt to taste

Chili Butter

1/2 stick butter melted
1 tsp chili powder
1/2 tsp onion powder
1/4 tsp salt

In a skillet, melt 2 tbsp butter. Add onion and cook until transparent. Add ground beef and seasonings. Mix to evenly distribute seasonings. Cook on medium heat until beef is fully cooked. Drain. Set aside

In a small saucepan combine chili butter ingredients and simmer until butter is melted.

Preheat oven to 425 degrees. Place 5 tortillas on a baking sheet. Brush evenly with chili butter. Turn tortillas over and fill each with equal amounts of beef, cheddar and beans. Add salt to taste. Cover each with another tortilla. Brush tops with chili butter. Bake for 5-7 minutes on each side until golden brown and cheese in melted.

With a pizza cutter, cut each tortilla into 4 quarters. Serve with sour cream and garnish with chives.

Fit & Fabulous Tip: For the chili butter, use 2 tbsp olive oil instead of butter.  For quesadillas; use shredded part-skim mozzarella instead of cheddar, olive oil in place of butter and multi-grain tortillas instead of flour tortillas.  I always suggest grass-fed beef especially if you’re eating clean. Replace sour cream with full-fat Greek yogurt and homemade salsa for dipping!
