It’s that time of year for football (and non-football) lovers everywhere, Super Bowl Sunday! I’m more of a “tune in for the half-time show” kinda girl myself. However, no matter how you slice it, we all have one thing in common when it comes to Super Bowl Sunday, the food! That’s right folks, what’s better then all your favorite foods on one table? I can’t think of a single thing actually. Although, some may say their team winning may be better!
Here’s one of my favorite recipes for this special season. (Stay-tuned for more). Put them all together and you’ll have yourself one heck of a Super Bowl party! We never had a party without deviled eggs when I was growing up, so my family would be very disappointed if I didn’t include this one. It may have a little something to do with the fact that I grew up on a chicken farm and my grandparents always had plenty of fresh eggs to go around. Either way, it’s a winner!
Who am I rooting for the day of the big game? Well, I’ll let you know as soon as I find out who’s playing!
Deviled Eggs with Crispy Prosciutto
8 slices prosciutto
1 dozen eggs, hard-boiled, peeled and halved
1 cup mayonnaise
1 tablespoon dijon mustard
course sea salt to taste
1 bunch chives (or finely chopped scallions)
Place prosciutto on a baking sheet and bake in 400 degree oven until crispy. Remove and let cool. Remove yolk from eggs and place in zip-closed bag; add mayonnaise and mustard. Knead bag until all ingredients are well blended. Place egg halves on serving platter. Cut small hole in corner of bag and pipe filling into each egg. Roll prosciutto and slice into thirds. Top each egg with prosciutto, chives and a sprinkle of sea salt. Serves 6-8
Fit & Fabulous Tip: Substitute mayonnaise with full-fat greek yogurt and omit prosciutto!
